Easy Chocolate Cake Recipe:

Updated: Mar 10

When I first started cakes, I was scared to touch a boxed cake mix. I was desperately trying to learn it all, cake decorating, marketing, customer reviews, etc.

I quickly learned, however, that customers (and everyone) just want cake that tastes good. This Semi-Homemade Chocolate Cake Recipe is one that I created. It tastes AMAZING and is super easy. The perfect balance between baking from scratch and convenience.

Chocolate Cake Recipe:

1 C water

1 C cocoa powder

1 tsp espresso powder (heaping)

1 C buttermilk

1/3 C oil

1 C sour cream

3 eggs

1 C sugar

1 chocolate cake mix

1 C flour

Directions:

  1. Bring a cup of water to a boil and then whisk in cocoa powder and espresso powder. Scrape mixture into big mixing bowl (or KitchenAid.)

  2. Add buttermilk, oil, sour cream and eggs into the mixing bowl with the cocoa mixture and whip until thoroughly combined.

  3. Add sugar and mix.

  4. Add box of chocolate cake mix.

  5. Add flour and mix, scraping the sides as you go.

  6. Prep cake pans. (See post on How To Prep Cake Pans For Easy Cake Removal)

  7. Bake at 350 until center is firm. (time varies depending on your pan size. About 15-20 min for cupcakes. About 30-40 min for cake rounds.)

Tips:

  • This cake recipe freezes extremely well. In fact, I ALWAYS freeze my cakes before frosting them to prevent crumbs!

  • If using a Bosch, I dump all my ingredients into the bowl and mix with the dough hook at the very end. (See my post for Bosch Tips & Tricks)
